Pumpkin & Bacon Pasta

Ingredients
2 Tbsp olive oil
1/4 c chopped onion
2 tsp finely chopped garlic
1/2 tsp salt
1 c Libby's 100% Pure Pumpkin
2 Tbsp grated Parmesan cheese
1/4 c Nestle Carnation Evaporated Milk
1 lb fresh pasta, cooked
1/2 c bacon, cooked and chopped
Directions
- In a medium skillet, heat oil over medium heat. Cook onion, garlic and salt for 1-2 minutes or until fragrant and translucent. Stir in pumpkin, cheese and evaporated milk; cook for an additional 3-4 minutes. Remove from heat.
- Add cooked pasta and bacon to pan and toss together. Serve with optional parmesan cheese or Italian parsley as garnish.
